Indispensable to processing wheat into flour, the territory is covered with mills. Depending on the energy sources, they are wind, water or tidal. In the absence of a natural energy source, an animal operated the mill. We then speak of a blood mill.

The mill was the property of the lord who received a ban right, forcing the peasants to grind their grain at the master's mill, and thus to buy that service from him.
