Origin and history
The Café du Commerce, also known as Brasserie du Commerce, is an emblematic building of Besançon, in the Doubs department, in the Burgundy-Franche-Comté region. Built in the second half of the 19th century, it is distinguished by its architecture and interior decor, typical of this period of urban and cultural prosperity.
The remaining decoration of the main hall was inscribed as historical monuments by order of 29 September 1981, highlighting its heritage value. This classification protects a rare decorative set, witness to the breweries and luxurious cafes that flourished in the major French cities.
In 2023, the establishment was sold and its management was then performed by Joshua Ferrer-Bartomeu, the last director before its reopening. After renovation work, the site reopened on 28 March 2024 under a new sign, Bouillon du Commerce, marking a historical continuity while adapting to contemporary expectations.
Located at 31 rue des Granges, the building is referenced in the Mérimée base, with a precise location in the city centre of Besançon. Its address and Insee code (25056) clearly links it to the Doubs, confirming its anchoring in local and regional heritage.
