Origin and history

The Château de Varillettes, also known locally as the Château de Vareilhettes, is a 16th century building located in the commune of Saint-Georges, in the Cantal department. Its construction is characterized by a main body with three square floors, a round tower with a staircase, and two corner turrets in a scauguette. This castle illustrates Renaissance civil architecture, with defensive elements still visible, although its primary role seems more residential than military.

The estate houses an exceptional medieval garden, organized in six squares of boxwood. This simple garden brings together medicinal and aromatic plants, such as sage, hyssop, l This type of garden, rare today, bears witness to the botanical knowledge and horticultural practices of the sixteenth century, often associated with monasteries or seigneurial residences.

The Polier family, originally from Saint-Flour, was responsible for the construction of the castle. Herailh de Polier, keeper of the king's seals, is its sponsor. The castle then passed to the family of Murat de Rochemore through the marriage of Catherine de Polhier with François de Murat in 1593. Their descendant, Claude de Murat, marshal of the king's camps, continued the lineage until the 18th century, when the estate was sold to the family of Lastic-Sieujac.

In the 19th century, the castle became the summer residence of the bishops of Saint-Flour, marking a change of vocation towards religious and institutional use. This period coincided with an increasing recognition of its heritage interest, leading to its inscription in historical monuments in 1982. The castle is today appreciated for its architecture, garden and history linked to the noble families of the Cantal.
