Origin and history
The Fischer brewery, founded in 1821 by Jean-Frédéric Fischer-Garnier under the name Brasserie de l'Ours-Blanc in Strasbourg, became the Fischer brewery in 1840. As early as 1850, she shipped a daily beer train to Paris, marking its expansion. The first cellars were dug in Schiltigheim in 1854, and production was entirely transferred there in 1884. Between 1903 and 1912, the brewery expanded after the purchase of the Hauer brewery, and its iconic 25-metre-high maltery was erected in 1912.
In the 20th century, Fischer bought several local breweries (Hache, Aigle, Rhin, Nico, Amos, Saint-Louis, City of Paris) and launched iconic beers such as Fischer Gold in 1925, with its Fischermannel mascot. It was damaged in 1944 and modernized in 1959. In 1989, she innovated with the 3615 Fisherman, the first beer sold by Minitel, and launched the Desperados in 1995. Repurchased by Heineken in 1996, it finally closed in 2009, transferring its production to other sites.
The site of 5 hectares, left to be abandoned, is the subject of a conversion project from 2015. Four iconic buildings, including the maltery and fireplace (listed as a historic monument in 2018), are preserved. The project includes 610 housing units, a school group, an MK2 cinema in the old maltery, and commercial spaces. The initially threatened villa Gruber is finally saved in 2016. Work began in 2018, with a phased delivery until 2024. The chimney, symbol of the site, was deconstructed in emergency in 2023.
Fischer Brewery has produced renowned beers such as Fischer Tradition, Dorelei, Fisherman, Desperados, Kriska, and Adelscott. Its industrial and architectural heritage remains anchored in the Schiltigheim landscape, between worker memory and urban conversion. The Fischerstub restaurant, which is still in operation, continues its relationship with the local community.
