Origin and history
The Coin d'Aval chalet, located in Fort-du-Plasne in the Jura, was built in 1824 as part of a cheese cooperative movement born in the early nineteenth century. These constructions, called fruit trees or cottages, centralized the production of cheese after the legal authorization to group producers. This model reflected a collective organization to optimize milk processing in rural areas of Haut-Jura.
The building, which was functional until 1906, housed dedicated spaces: a manufacturing room with weighing, a hooded fireplace equipped with a potency for the cauldron, a cellar, and a room for milk and cheese refining. Its narrow openings, designed to regulate ventilation, illustrated conservation techniques adapted to the Jura climate. The closure of the cottage took place when the small cooperatives were merged into a unique village structure, marking the evolution of local wheat practices.
Ranked a Historic Monument in 2003, the Aval Coin chalet now retains its original equipment and bears witness to the utility architecture linked to the 19th century dairy economy. Its protection includes all fixed installations, highlighting its heritage role in the agri-food history of Franche-Comté. The communal property now ensures its preservation, although its access to the public (visits or uses) is not specified in the available sources.
