Origin and history

The Fouquet's was founded in 1899 by Louis Fouquet, a limonadier, at the site of an old co-op on the ground floor of a building built in 1863. Under the influence of ambient Americanism, the establishment opened under the name The Criterion-Fouquet The bar quickly attracted a varied clientele, imposing as a meeting place in the Paris de la Belle Époque.

In 1906, the Brazilian Aeronaut Alberto Santos-Dumont opened the Escadrille Bar at the bottom of the ground floor, strengthening the establishment's link with aviation pioneers and avant-garde circles. Seven years later, in 1913, Léopold Mourier, Fouquet's successor, opened the restaurant at the entresol, consolidating the reputation of the place as a must-see for Parisian life. The decor, entirely redesigned in 1958 by Jean Royère, marked a transition to a resolutely modern style.

Today, the Fouquets remains the last witness of the great mythical cafés of the Champs Elysées. Ranked a Historical Monument in 1990 for its rooms and salons (ground floor and entresol), it embodies a place of memory associated with French literary and film life. Its history reflects the social and cultural evolutions of Paris, from the 19th century to the contemporary era.
